Salmon Patties - Master Cookbook Recipe # 389

This recipe is a true Southern staple that many of us grew up with. Using simple pantry ingredients like canned Alaskan pink salmon, these patties come together quickly for a reliable and delicious meal. The combination of self-rising flour and cornmeal gives them a perfect golden crust, while the green onions add a fresh pop of flavor to every bite.

Ingredients

  • 14.75 oz. Can Alaskan Pink Salmon
  • 2 Green Onions, minced
  • 1 Large Egg
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 cup Self-Rising Flour
  • 1/8 cup Self-Rising Cornmeal Mix
  • Cooking Oil (Canola or Vegetable)

Instructions

  1. Prep the Salmon: Open and drain the salmon. Place it in a large bowl and carefully remove and discard the bones and skin.
  2. Mix: Add the minced onions, egg, salt, pepper, flour, and cornmeal mix to the bowl. Mix everything together thoroughly.
  3. Heat the Oil: Add 1/2 inch of oil to a skillet and heat to medium-high. Test the readiness by dropping a small piece of batter in,if it floats and sizzles, you are ready to fry.
  4. Fry: Lower the heat to medium. Drop about 1/8 cup of batter per patty into the skillet. Fry for 3 minutes, then flip and gently flatten each patty.
  5. Finish: Cook for an additional 2 minutes until perfectly browned. Use tongs to remove the patties and drain them on paper towels.

Keeping a can of salmon in the pantry means you're always just minutes away from a hot, home-cooked dinner. When you're making these, don't be afraid to get in there and mix well so the flour and cornmeal are evenly distributed,it’s what helps them hold their shape and get that wonderful crunch in the skillet
