Rutabaga's, Glazed - Master Cookbook Recipe # 683

Ingredients
- 2 medium rutabagas (peeled and chopped into 3/4" to 1" cubes)
- 1/4 cup salted butter
- 2 1/2 tsp granulated or brown sugar
- Dash of salt
- Water (enough to cover)
Instructions
- Prep: Peel the wax off the rutabagas and chop them into uniform cubes.
- Boil: Place the rutabaga cubes in a medium saucepan. Add enough water to just reach the top of the cubes along with the butter. Bring to a boil on the stovetop.
- Cook: Continue to boil until the rutabagas are fork-tender. Most of the water should have evaporated, leaving just a small amount of liquid and the melted butter.
- Glaze: Stir in the sugar. Continue to cook, allowing the rutabagas to sizzle for 3 to 4 minutes. This step is crucial for developing a deep, golden glaze.
- Finish: Add a dash of salt to balance the sweetness, stir once more, and serve warm.

Tammy’s Tips
Rutabagas can be quite firm and a little tough to cut through. A great trick is to pop them in the microwave for a couple of minutes first; this softens them just enough to make chopping much easier and safer. When you reach the glazing stage, don't be afraid of that sizzle,that's where all the flavor lives! If you prefer a deeper, more caramel-like flavor, choose brown sugar; for a cleaner sweetness that lets the rutabaga shine, go with granulated white sugar.
