Ribs & Beans, Crockpot - Master Cookbook Recipe # 503

This meal is a true family favorite that proves how simple ingredients can come together to create something spectacular. By combining three types of beans with slow-cooked, tender pork ribs, you get a hearty, smoky dish that is reminiscent of a classic Southern barbecue cookout,all made right in your slow cooker. It’s a "dump and go" recipe that delivers deep, slow-baked flavor with a rich, savory sauce that will have everyone coming back for seconds.

Ingredients

  • 4 lbs. Bone-in pork ribs (cut apart)
  • Pork rub (your choice)
  • 1 Large onion (cut into 1-inch pieces)
  • 15 oz. can Pork n’ beans
  • 15 oz. can Black beans
  • 15 oz. can Kidney beans
  • 1 1/2 cups BBQ sauce (your choice)
  • 1/2 tsp Liquid smoke
  • 1 cup Hot water

Instructions

  1. Season and Broil: Remove the ribs from the package (do not rinse). Cut the ribs apart if they aren't already. Rub them generously with your favorite pork rub. Place a wire rack inside a foil-lined half-sheet pan and broil the ribs for 10 minutes on each side to lock in color and flavor.
  2. Prep the Crockpot: Line your slow cooker with a liner for easy cleanup. Place the broiled ribs in the bottom.
  3. Mix the Sauce: In a separate bowl, combine the chopped onion, pork n’ beans, black beans, kidney beans, BBQ sauce, liquid smoke, and hot water.
  4. Slow Cook: Pour the bean and sauce mixture over the ribs. Cover and cook on low for 8 hours.
  5. Finish: Once finished, use a deep spoon or ladle to carefully skim any excess fat off the top and discard before serving.

Notes

Tammy’s Tips: This meal is a family favorite for sure! It may sound simple, but the way the flavors from the ribs meld with the different beans is just delicious. If you’re in a bit more of a hurry, you can also make this in a Dutch oven! Just cover it tightly and bake at 350°F for 4 hours. Either way, you'll end up with meat that is fall-off-the-bone tender and beans that are packed with smoky BBQ goodness.
