Prune Cake - Master Cookbook Recipe # 249

Don't let the name fool you,this is a deeply flavorful, spice-filled treasure that is an absolute "old-timer favorite." The ready-to-eat prunes and buttermilk create a texture that is incredibly moist and dense, while the cinnamon, nutmeg, and allspice provide a warm, comforting aroma.

Ingredients

  • 1 cup vegetable oil
  • 1-1/2 cups granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1 tsp vanilla extract
  • 2 cups self-rising flour
  • 1 cup buttermilk
  • 2 cups ready-to-eat prunes, chopped
  • 1 cup chopped pecans

Instructions

  1. Combine Wet Ingredients: In a large bowl, combine the vegetable oil, sugar, and eggs.
  2. Flavor: Stir in the cinnamon, nutmeg, allspice, and vanilla extract.
  3. Mix Batter: Add 1 cup of the self-rising flour and all of the buttermilk. Mix well, then add the remaining cup of flour.
  4. Beat: Beat the batter on medium speed for exactly 2 minutes to ensure the structure is just right.
  5. Fold: Gently stir in the chopped prunes and the chopped pecans by hand.
  6. Bake: Pour the batter into a greased 13x9x2 inch baking pan. Bake at 325°F for approximately 40 minutes, or until a toothpick comes out clean.
  7. Finish: Allow the cake to cool in the pan. You can simply dust it with confectioner’s sugar or frost it with your favorite icing.
