Ingredients

  • The Roast: Prime rib roast (washed, trimmed, and patted dry)
  • Herb Butter Rub:
  • 1 cup salted butter (softened)
  • Fresh chopped herbs: Rosemary, thyme, basil, and garlic
  • Roasting Base & Au Jus:
  • 2 1/2 cups beef broth
  • 1 large onion, sliced
  • Extra fresh rosemary
  • Seasoning:
  • Salt and black pepper
  • Steak seasoning

Instructions

  1. Prepare the Herb Butter: In a small bowl, mix the softened salted butter with your freshly chopped rosemary, thyme, basil, and garlic.
  2. Coat the Roast: Rub the herb butter all over the roast, making sure to save a small portion for basting later in the cooking process.
  3. Set Up the Pan: In a roasting pan equipped with a rack, add the beef broth, sliced onion, and a few extra sprigs of rosemary to the bottom.
  4. Season: Place the roast on the rack. Generously season the outside with salt, black pepper, and your favorite steak seasoning.
  5. High-Heat Sear: Place in an oven preheated to 400°F and roast for 20 minutes. This creates that beautiful initial crust.
  6. Slow Roast: Lower the oven temperature to 300°F. Insert a meat thermometer into the thickest part of the roast.
  7. Monitor Temperature: Continue roasting until the internal temperature hits 120°F (for medium-rare).
  8. Rest & Serve: Remove the roast from the oven and let it rest for 10 to 15 minutes before carving. This is crucial for keeping the juices inside.
  9. The Au Jus: Strain the drippings from the bottom of the roasting pan and serve them in small bowls alongside each slice.

Notes

Tammy’s Tip: If you have family members who prefer their meat more well-done, serve them the end pieces,they naturally cook through more than the center!
