Ingredients

  • Large russet or sweet potatoes
  • 1/4 cup salted butter (room temperature)
  • Aluminum foil
  • Salt (for russets)
  • Optional toppings: Butter, salt, pepper, sour cream, or cinnamon sugar

Instructions

  1. Prep: Scrub the potatoes clean with a vegetable brush under running water and pat them completely dry with paper towels.
  2. Wrap: Lay each potato on a piece of aluminum foil large enough to wrap it completely. Using your hands, rub the room-temperature butter all over the skin of each potato.
  3. Season: If using russet potatoes, sprinkle them with salt before wrapping them tightly in the foil. (Skip the salt for sweet potatoes).
  4. Bake: Place in the oven at 400 degrees Fahrenheit and bake for 30 minutes.
  5. Rotate: Rotate the potatoes and bake for an additional 30 minutes, or until they are tender.
  6. Serve: Remove from the oven. Serve russets with butter, salt, pepper, and sour cream. Serve sweet potatoes with butter and cinnamon sugar, or save them to use in your favorite sweet potato pie recipe!

Tammy’s Tips

To ensure a perfectly fluffy potato, you can check for doneness by gently squeezing the potato with an oven mitt; it should feel soft and give easily under pressure. If you are preparing these for a large crowd, you can keep the wrapped potatoes warm in a low oven or an insulated cooler for up to an hour without losing that signature texture. For the best flavor, always use high-quality salted butter to rub the skins, as it creates a savory, seasoned crust that is just as good as the inside.
