Ingredients
- 1 medium baked potato (room temperature)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 lb. powdered sugar (plus extra for dusting and adjusting dough)
- Creamy peanut butter (Jif brand recommended)
Instructions
- Prepare the Potato: Bake the potato until thoroughly cooked. Once cooled to room temperature, peel it carefully and remove any dark spots.
- Mix the Base: Blend the potato with the vanilla extract, salt, and 2 cups of powdered sugar until the mixture is completely smooth.
- Form the Dough: Gradually add the remaining powdered sugar until a stiff dough forms and begins to pull away from the sides of the bowl. You may need a little extra sugar depending on the size of your potato.
- Roll and Fill: Dust your counter generously with powdered sugar. Roll the dough out to about 1/4 inch thickness. Spread a layer of creamy peanut butter evenly over the top.
- Shape: Carefully roll the dough into a tight log to create a pinwheel pattern. Wrap the log and chill in the refrigerator for at least 1 hour.
- Slice and Store: Once firm, slice into rounds. Store in an airtight container in the refrigerator for up to 2 weeks.
Notes
Tammy’s Tips
Roll out the candy while it is fresh out of the mixer to make it much easier to mold and handle. Use a scraper to help loosen the dough from the surface as you roll, and be sure to wipe your knife blade clean between slices for the neatest candy spirals!
