Pinto Beans, Instapot - Master Cookbook Recipe # 649

This recipe delivers perfectly seasoned, tender pinto beans with that rich, savory broth we all love. Using an Instant Pot makes it fast, but the sauté finish gives it that authentic "cooked all day" consistency.

Ingredients

  • 1 1/2 cups dried pinto beans
  • 4 cups beef stock (or 4 cups hot water mixed with 1 Tbsp. beef bouillon granules)
  • 3-4 oz. country ham seasoning meat
  • 1/8 cup olive oil
  • 1/2 tsp black pepper (optional)

Instructions

  1. Prep the Beans: Inspect your dried beans by pouring them into your hand one handful at a time. Remove any discolored beans, rocks, or clumps. Rinse the beans thoroughly and drain.
  2. Fill the Pot: Place the rinsed beans into the Instant Pot. Add the beef stock (or water/bouillon), olive oil, country ham, and pepper. Ensure the liquid level is about 2 inches above the beans.
  3. Pressure Cook: Secure the lid and close the pressure valve. Set the Instant Pot to the Multigrain setting for 40 minutes on medium pressure.
  4. Reduce & Thicken: Once the timer is up and the pressure has naturally released, carefully open the lid. Turn the Instant Pot to the Sauté setting.
  5. Final Simmer: Cook the beans on sauté until the liquid reduces and is level with the top of the beans. This creates a beautiful, thick broth.
  6. Serve: Turn off the heat and serve your beans piping hot!
  7. Note: If your pressure cooker doesn't have a sauté setting, simply transfer the beans and broth to a large pot on the stove and simmer on medium-high until the broth has reduced.

Tammy’s Tips

The "handful" method of sorting is the best way to make sure no little rocks end up in your Sunday dinner! Using country ham gives these beans a saltier, deeper profile than regular ham, which is why I love it for the Instant Pot.
