Ingredients

  • 6 Tbsp salted butter
  • 1 1/2 cups light brown sugar (packed)
  • 1 1/2 cups granulated sugar
  • 1/4 tsp salt
  • 1 cup heavy cream (or evaporated milk)
  • 1 tsp vanilla extract
  • 2 cups chopped pecans

Instructions

  1. Prep: Measure all ingredients before you begin. Line a large pan with parchment paper.
  2. Coat the Pot: Start melting the butter in a saucepan. Use a fork to pick up the butter and coat the sides of the pot thoroughly to prevent crystals from forming.
  3. Boil: Once the butter is melted, add the salt, sugars, and cream. Bring to a slow boil over medium heat, stirring with a wooden spoon.
  4. Steam: When it reaches a boil, cover the pot with a lid and set a timer for 3 minutes. (Do not reuse the spoon without washing off all sugar first).
  5. Soft Ball Stage: After 3 minutes, remove the lid and insert a candy thermometer (ensure it doesn’t touch the sides). Cook until the mixture reaches 234°F.
  6. Rest: Remove from heat and let it sit undisturbed for 5 minutes.
  7. Cream & Mix: Pour the candy into a bowl. Add the pecans and vanilla. Mix until the texture becomes slightly creamy.
  8. Scoop: Quickly drop spoonfuls onto the parchment paper while the candy is still shiny.
