This rustic Southern favorite is as beautiful as it is delicious. By baking the cake directly on top of fresh peaches and brown sugar in a cast-iron skillet, you create a natural caramel glaze that permeates the fruit. When flipped, you’re left with a stunning, golden cake topped with tender, caramelized peaches.

Ingredients

  • Skillet Base:
  • 4 Tbsp salted butter
  • 2/3 cup light brown sugar, packed
  • 2 cups sliced ripe peaches
  • Cinnamon sugar (optional)
  • Cake Batter:
  • Cooking spray
  • 1/2 cup shortening
  • 1/2 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1-1/2 cups self-rising flour
  • 3/4 cup buttermilk
  • 1 tsp vanilla extract

Instructions

  1. Prepare Skillet: Melt the 4 tablespoons of butter in a 10.25-inch cast-iron skillet. Add the 2/3 cup brown sugar and the sliced peaches. Sprinkle with cinnamon sugar if you like.
  2. Cream: In a separate bowl, use an electric mixer to cream the shortening and both sugars (1/2 cup brown and 1 cup granulated) until light and fluffy.
  3. Eggs: Add the eggs one at a time, beating well after each addition.
  4. Finish Batter: Mix in the self-rising flour, buttermilk, and vanilla. Beat on medium speed for exactly 2 minutes.
  5. Bake: Grease the sides of the skillet with cooking spray. Carefully pour the cake batter over the peaches. Bake at 350°F for 35 to 45 minutes, or until the cake is golden and set.
  6. Invert: Allow the cake to cool for just a few minutes, then carefully invert it onto a large serving plate. Use a spatula to rearrange any fruit that might have stuck to the pan.
