Parmesan Chicken - Master Cookbook Recipe # 540
This family favorite delivers a comforting, classic Italian-style dinner featuring crispy, breaded chicken over a bed of saucy pasta. By using crushed croutons for the breading, you get an extra boost of seasoning and a perfect crunch that pairs beautifully with melted mozzarella and tangy marinara.

Ingredients
- 1 lb. thin-sliced chicken breast (sliced 1/2 inch thick)
- 1 lb. spaghetti noodles (cooked and drained)
- 1 cup self-rising flour
- 1 pack Italian-style croutons, crushed
- 1 egg, beaten
- 1 Tbsp Italian seasoning (no salt)
- 2 jars Bertolli Marinara
- 1 cup water
- 8 oz. grated Parmesan
- 8 oz. grated or sliced mozzarella
- Cooking oil (for frying)
Instructions
- Prepare the Chicken: Slice your chicken breasts 1/2 inch thick. Set up three stations: one with the beaten egg, one with the flour mixed with Italian seasoning, and one with the crushed croutons. Dip each piece of chicken into the egg, dredge in the flour mixture, then press firmly into the croutons to coat. Let the breaded chicken rest for 10 minutes.
- Fry: Heat oil in a skillet until a test piece of breading sizzles. Fry the chicken for 3 to 4 minutes per side until golden brown and cooked through. Drain on paper towels.
- Assemble (Baked Method): Preheat your oven to 350°F. In a sprayed 13x9 dish, layer the cooked noodles, marinara sauce, and cheese. Top with the fried chicken, add mozzarella slices, and sprinkle with Parmesan. Bake until the cheese is bubbly.
- Assemble (No-Bake Method): Mix the marinara sauce with the hot, cooked noodles and shredded mozzarella. Plate the saucy noodles first, then place the fried chicken on top and garnish with fresh Parmesan.

For the absolute best results, I recommend using the no-bake method if you want to keep that chicken breading extra crispy and delicious! If you have trouble slicing your chicken thin, try popping the breasts in the freezer for about an hour before cutting to make them much easier to handle. This dish is a true crowd-pleaser and always a hit at my house!
