Ingredients

  • Chicken: 2 boneless chicken breasts (cut very thin for stir fry)
  • Vegetables: Fresh vegetables of your choice (prepped/chopped)
  • Aromatics & Seasoning: 1/2 tsp ground ginger, 1 Tbsp Badia Fried Rice Seasoning
  • Oils: Olive oil and Sesame oil (divided)
  • Orange Sauce: 1 Orange (peeled & chopped), Orange zest, 1/8 cup Soy sauce, 2 Tbsp Honey or sugar
  • Thickener: 2 Tbsp Cornstarch mixed with 1 cup Cold water

Instructions

  1. Sauté Vegetables: Heat your wok and add a splash of olive oil and sesame oil. Cook your prepped vegetables with the ginger and fried rice seasoning until tender. Transfer the veggies to a large bowl, but keep the juices in the wok.
  2. Make the Sauce: Add the chopped orange and soy sauce to the boiling wok juices. Mash the oranges slightly to release the juice, then stir in the orange zest.
  3. Thicken: Pour the cornstarch and water mixture into the wok. Cook, stirring constantly, until the sauce becomes clear and thickens. Stir in the honey or sugar, then pour this beautiful sauce over your bowl of vegetables.
  4. Cook Chicken: Clean the wok and preheat it again with more olive and sesame oil. Add the thinly sliced chicken and sprinkle with more fried rice seasoning. Sauté until the chicken is no longer pink.
  5. Assemble: Combine the chicken with the saucy vegetables and serve immediately over a warm bed of white rice.

Notes

Tammy’s Tips: The secret to a great stir fry is having all your ingredients prepped and ready before you turn on the heat, because it goes fast! This sauce isn't spicy, which makes it great for the whole family, but if you like a little kick, just toss in some red pepper flakes while the sauce is thickening. It’s a wonderful way to get your kids to eat their veggies!
