Ingredients

  • 5-6 yellow summer squash, cleaned and chopped
  • 1 onion, chopped
  • 1 banana pepper (fresh from the garden if available)
  • 1 clove of garlic, sliced
  • 1/2 cup salted butter
  • 3/4 cup evaporated milk
  • 3 eggs
  • 6 oz. mild cheddar cheese, grated
  • 1 sleeve of Ritz crackers, crushed
  • 1 tsp salt
  • 3/4 tsp black pepper

Instructions

  1. Boil Vegetables: Place the chopped squash, onion, garden pepper, and garlic in a saucepan. Cover with water and cook over medium heat for 20 to 30 minutes until everything is soft and tender. Drain thoroughly.
  2. Prepare Dish: Melt the butter and add it to a 13x9x2-inch glass casserole dish (or a round deep baking dish). Add the drained squash mixture to the dish.
  3. Mix Liquid: In a separate bowl, whisk together the evaporated milk, eggs, salt, and pepper.
  4. Combine: Pour the egg and milk mixture into the casserole dish with the squash and stir gently to combine.
  5. Top: Sprinkle the grated mild cheddar cheese over the top, followed by the crushed Ritz crackers.
  6. Bake: Bake at 350°F for 50 to 60 minutes until the casserole is bubbly and the cracker topping is a beautiful golden brown.
