Old Fashioned Fresh Peach Dessert Cups

A creamy, layered summer treat with fresh peach puree and a silky whipped topping.

Ingredients

  • Peach Puree Base:
  • 2 cups fresh peaches, peeled and sliced
  • 1/4 cup granulated sugar (Reserve 1/3 cup of this puree for the whipped topping)
  • Pudding Layer:
  • Remaining peach puree
  • 1/3 cup granulated sugar
  • 8 tbsp cornstarch
  • 2 1/2 cups milk
  • Assembly:
  • Shortbread cookies or Cinnamon Graham crackers, crumbled
  • Fresh peaches, finely chopped
  • Whipped Topping:
  • 2 cups heavy whipping cream
  • 1/4 cup granulated sugar
  • Reserved 1/3 cup peach puree
  • 1 fresh peach, sliced (for garnish)

Instructions

  1. Prepare Puree: In a blender or food processor, puree 2 cups of peaches with 1/4 cup sugar until smooth. Set aside 1/3 cup of this mixture to use later in the topping.
  2. Cook Pudding: In a saucepan or non-stick skillet, combine the remaining puree, 1/4 cup sugar, cornstarch, and milk. Whisk well to ensure there are no lumps.
  3. Thicken: Heat over medium heat, stirring constantly, until the mixture thickens into a pudding consistency. Remove from heat.
  4. Layer: Pour the warm pudding into dessert cups. Let them cool slightly.
  5. Add Crunch: Sprinkle a layer of crumbled shortbread cookies or cinnamon graham crackers over the pudding. Top with a few spoonfuls of finely chopped fresh peaches.
  6. Make Topping: In a large bowl, beat the whipping cream, 1/4 cup sugar, and the reserved 1/3 cup peach puree until stiff peaks form.
  7. Finish: Pipe or dollop the peach whipped cream onto the dessert cups. Garnish each with a fresh peach slice.
  8. Enjoy immediately or chill until serving!
