Mexican Rice, Authentic - Master Cookbook Recipe # 670

This recipe produces perfectly seasoned, fluffy Mexican rice with that signature restaurant-style flavor. By toasting the rice before adding the liquid, you create a beautiful nutty base that holds up perfectly to the tomato and cumin. It's the ultimate companion for tacos, enchiladas, or a simple bean dish.

Ingredients

  • 2 cups Long grain rice
  • 2 Tbsp Cooking oil
  • 8 oz can Tomato sauce
  • 5 cups Water
  • 3 Tbsp Knorr chicken bouillon granules
  • 2 Tbsp Dehydrated onion flakes
  • 1/2 tsp Cumin

Instructions

  1. Toast the Rice: Heat a large, deep skillet with a lid over medium-high heat. Add the cooking oil. Once warm, add the rice and stir continually until the grains are a light golden brown.
  2. Combine: Carefully pour in the tomato sauce and water. Add the chicken bouillon, dehydrated onion flakes, and cumin. Stir once to combine.
  3. Boil & Simmer: Cover the pan with a tight-fitting lid. Once the liquid begins to boil, immediately turn the heat down to a low simmer. Do not remove the lid or stir.
  4. The "Jiggle" Step: Set a timer for 20 minutes. At the 10-minute mark, simply jiggle the handle of the skillet to move the rice around slightly; this prevents sticking and helps redistribute the tomato sauce without letting the steam out.
  5. Rest: When the 20 minutes are up, remove the skillet from the heat. Keep it covered and undisturbed for 5 minutes.
  6. Serve: Remove the lid and fluff gently before servin
