Mexican Chicken, Crockpot - Master Cookbook Recipe # 536

This effortless crockpot meal brings bold, zesty flavors to your table with minimal cleanup. By slow-cooking a mix of chicken breasts and thighs with savory fajita seasonings and a blend of salsas, you get perfectly tender, shreddable chicken that is ideal for tacos, nachos, or bowls.

Ingredients

  • Crockpot liner (optional)
  • 2 or 3 chicken breasts, boneless, skinless
  • 2 or 3 chicken thighs, boneless, skinless
  • 1/2 cup chopped onion
  • 1/2 bell pepper, chopped
  • 1 Tbsp chicken bouillon granules
  • 1 Tbsp fajita seasoning (Bidia recommended)
  • 1/2 cup medium salsa (Herdez recommended)
  • 1/2 cup salsa verde (Herdez recommended)
  • 1/2 cup water
  • 1/3 cup original queso cheese (optional)

Instructions

  1. Prepare the Pot: Line your crockpot with a liner for easy cleanup if desired. Place the chicken breasts and thighs in the bottom of the pot.
  2. Add Ingredients: Add the onion, bell pepper, bouillon, fajita seasoning, salsas, and water in the order listed. Give it a light mix to distribute the seasonings.
  3. Slow Cook: Cover and cook on High for 4 hours or on Low for 8 hours until the chicken is tender.
  4. Shred and Serve: Once cooked, use a fork to shred the chicken directly in the pot, mixing it with all those delicious juices. If you used a liner, you can easily lift the whole bag and transfer leftovers to a container once it has cooled.

Notes

Tammy's Tips

While boneless chicken is convenient, using bone-in chicken and removing the bones before serving can add even more depth and flavor to this dish. I highly recommend adding the optional queso at the end; it melts into the sauce and truly puts this Mexican chicken in a league of its own! Serve this up in warm tortillas or over a bed of rice for a family favorite meal that basically cooks itself.
