Ingredients
- 1/4 cup granulated sugar
- 1/2 tsp. cream of tartar
- 2 tsp. cornstarch
- 5 large egg whites (room temperature)
Instructions
- In a small bowl, combine the granulated sugar, cream of tartar, and cornstarch. Mix these dry ingredients well.
- In a clean mixing bowl, beat the room-temperature egg whites on high speed until they become frothy.
- Add 1 tablespoon of the dry sugar mixture and continue beating until you see foam.
- Gradually add the remaining dry ingredients, one tablespoon at a time, beating until the mixture is glossy and stiff peaks form.
- Check the consistency every 30 seconds to ensure you do not overbeat.
- Spread the meringue over the hot pie filling, making sure to seal it completely to the edges of the crust.
- Bake at 325 degrees F for 25 minutes (ensure it bakes for at least 20 minutes to cook through).
- Allow the pie to sit at room temperature until it is completely cooled before serving.
Notes
Tammy's Tips: Never put a warm meringue pie in the refrigerator, or it will "weep" and get watery! For a real treat, try using monk fruit sugar instead of granulated sugar,it creates a beautiful meringue with a lovely crispy crust. Remember that old-fashioned meringue is best served the day it's made, so try to time your baking for the day you plan to share it with your family.
