Ingredients
- 1-1/2 cups salted butter, room temperature
- 3 cups granulated sugar
- 9 large eggs, separated
- 1 cup sour cream
- 3 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp salt
- 2 Tbsp maple extract
- 1 cup chopped pecans
Instructions
- Prep: Preheat your oven to 300°F. Thoroughly grease and flour an extra-large 12-cup Bundt pan.
- Cream: Using a stand mixer, cream the butter and sugar until the mixture is light and fluffy.
- Yolks: Add the egg yolks one at a time, ensuring each is fully incorporated before adding the next.
- Flavor & Cream: Blend in the baking soda, salt, maple extract, and sour cream until the batter is smooth.
- Flour: Gradually add the flour, about 1/2 cup at a time. Once all the flour is in, mix on medium-low speed for exactly 2 minutes.
- Fold Pecans: Gently fold the chopped pecans into the batter.
- Egg Whites: In a separate clean bowl, beat the 9 egg whites until stiff peaks form. Carefully fold the whites into the cake batter,be gentle so you don't lose that air!
- Bake: Transfer the batter to your prepared Bundt pan. Bake at 300°F for 90 minutes, or until a long skewer inserted comes out clean.
