Ingredients

  • 1 lb. Chicken cutlets (skinless, boneless)
  • 1/4 cup Salted butter
  • 1/4 cup Olive oil
  • 2 Garlic cloves (pressed)
  • 1 Lemon (juiced)
  • 1 cup Water
  • Seasonings: Salt, black pepper, and oregano (to taste)

Instructions

  1. Sear the Chicken: Season your chicken cutlets on both sides with salt, pepper, and oregano. In a large skillet, heat the butter and olive oil over medium-high heat. Fry the chicken until beautifully browned on both sides.
  2. Deglaze: Remove the chicken from the pan. Pour the lemon juice and water into the hot skillet, scraping the bottom to release all those flavorful browned bits (deglazing). Add the pressed garlic and simmer for 1 minute.
  3. Finish Cooking: Choose your preferred method to finish the chicken:
  4. Crockpot Method: Place the seared chicken in the crockpot. Pour the pan juices over the top. Cook on High for 2.5 hours or Low for 5 to 6 hours.
  5. Oven Method: Place the chicken in a baking dish and pour the pan juices over it. Bake at 350°F for 35 to 40 minutes.
  6. Serve: Baste the chicken generously with the remaining pan juices just before serving to keep it moist and flavorful.

Notes

Tammy’s Tips: Don't skip the deglazing step! Those little browned bits in the bottom of your skillet are packed with flavor and make the sauce truly special. This chicken is fantastic sliced thin over a fresh salad or served with a side of my Linguine Positano. It’s light, healthy, and the garlic-lemon combo is just timeless!
