Japanese Pie - Master Cookbook Recipe # 453

A wonderful Southern holiday tradition, this "Japanese Pie" (also known as Japanese Fruit Pie) is a unique, custardy delight. Filled with crunchy pecans, sweet golden raisins, and shredded coconut, it creates a beautiful texture that has made it a favorite for generations of Collard Valley Cooks.

This is recipe #453 in Tammy’s Master Cookbook.

Ingredients

  • 1 9-inch unbaked pie crust
  • 1/3 cup salted butter, melted
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 dash salt
  • 1 tsp vanilla extract
  • 3/4 cup chopped pecans
  • 1/2 cup golden raisins
  • 1/2 cup flaked coconut

Instructions

  1. Preheat your oven to 325°F.
  2. Whisk: In a medium bowl, combine the melted butter, sugar, eggs, salt, and vanilla. Use a wire whisk to mix until the ingredients are well incorporated.
  3. Fold In: Add the chopped pecans, golden raisins, and flaked coconut to the mixture. Stir well to ensure the fruit and nuts are evenly distributed.
  4. Fill: Pour the filling into your 9-inch unbaked pie crust.
  5. Bake: Place in the oven and bake for 1 hour.
  6. Cool: Remove from the oven and place on a wire rack to cool completely. Cooling on a rack is essential to prevent the bottom of the crust from "sweating."

Tammy’s Tips

This pie is perfect for the holidays because it doesn't require refrigeration, making it a great "make-ahead" dessert for your busy family gatherings. For the best flavor, I highly recommend using golden raisins rather than dark ones, as they provide a subtle sweetness that pairs perfectly with the coconut. Always let the pie cool entirely on a wire rack to ensure your crust stays perfectly flaky and crisp on the bottom!
