Ice Box Fruitcake - Master Cookbook Recipe # 231

This "no-bake" holiday classic is a nostalgic favorite that many remember from their childhood. Whether you use graham crackers or vanilla wafers, this fruitcake is dense, chewy, and packed with toasted pecans, golden raisins, and bright maraschino cherries. It’s the perfect make-ahead treat.

Ingredients

  • 2 cups graham crackers, crushed (or one 16 oz. box vanilla wafers, crushed)
  • 4 cups toasted pecans, chopped
  • 15 oz. box golden raisins
  • 10 oz. package miniature marshmallows
  • 1 cup salted butter
  • 12 oz. jar maraschino cherries

Instructions

  1. Prep Fruit: Drain the maraschino cherries, making sure to reserve the juice. Chop the cherries into small pieces.
  2. Soak: Place your crushed crackers (or wafers) in a large mixing bowl and pour the reserved cherry juice over them.
  3. Melt: In a saucepan over medium heat, melt the butter. Add the marshmallows and stir constantly until the butter and marshmallows are completely melted and smooth.
  4. Combine: Pour the warm marshmallow mixture into the bowl with the crackers and juice. Add the chopped pecans, golden raisins, and chopped cherries. Mix everything together thoroughly until well combined.
  5. Shape: Divide the mixture onto two large pieces of parchment paper. Roll them tightly into two long logs.
  6. Chill: Place the logs in the refrigerator for at least 4 hours to firm up.
  7. Serve: Once chilled, unwrap the logs and slice into thin serving pieces.

Notes

Tammy's Tip: This is a wonderful holiday gift because it stores so well! Simply wrap the slices or the whole log in foil and keep it in the refrigerator for up to one month.
