Hoppin John - Master Cookbook Recipe # 653
Hoppin' John is a classic Southern dish traditionally served on New Year's Day for good luck, but it's delicious enough to enjoy all year round! This version is packed with savory ham, tender black-eyed peas, and just the right amount of spice from red pepper flakes. It’s a hearty, "one-pot" style meal that’s simple to prepare and incredibly satisfying when served over a fluffy bed of rice.

Ingredients
- 12 to 16 oz package Frozen black-eyed peas
- 1 lb Cooked ham, chopped
- 4 cups Chicken stock
- 1 Tbsp Chicken bouillon granules
- 1/2 Large onion, chopped
- 2 Green onions, chopped
- 2 Tbsp Cooking oil
- 1/2 tsp Black pepper
- 1/2 tsp Red pepper flakes
- 1 Bay leaf
- For serving: 1 cup cooked white or brown rice
Instructions
- Sauté: In a large pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and green onions, cooking for about 2 minutes until they are tender and fragrant.
- Combine: Add the chicken stock, chicken bouillon, black-eyed peas, chopped ham, black pepper, red pepper flakes, and the bay leaf to the pot.
- Simmer: Bring the mixture to a boil, then reduce the heat to a simmer. Cook uncovered, stirring occasionally, until most of the liquid has evaporated. You want to leave about one cup of savory "pot liquor" at the bottom.
- Serve: Remove the bay leaf. Spoon the pea and ham mixture over a bed of warm rice, ensuring each serving gets some of that delicious concentrated broth.
