This Honeybun Cake is a decadent, swirl-filled treat that mimics the flavors of the classic snack cake but with a rich, buttery, homemade twist. By using a butter cake mix enhanced with sour cream and a cinnamon-pecan center, you get a cake that is incredibly moist and flavorful. Finished with a sweet glaze while still warm, it’s easy to see why Tammy calls this the "Best Cake Ever!"

Ingredients

  • Cake Batter:
  • 1 cup Salted butter (room temperature)
  • 1 box Butter cake mix (reserve 1/2 cup of dry mix for cinnamon layer)
  • 4 Large eggs (room temperature)
  • 8 oz. Sour cream
  • Cinnamon Layer:
  • 1/2 cup Reserved cake mix
  • 1/2 cup Light brown sugar (packed)
  • 2 tsp Ground cinnamon
  • 1/2 cup Chopped pecans
  • Glaze:
  • 1 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 2 Tbsp Milk

Instructions

  1. Cream Butter: Preheat your oven to 325°F. In a large bowl, beat the room temperature butter until it is light, fluffy, and pale in color.
  2. Mix Batter: Add the eggs, sour cream, and the remaining dry cake mix (minus the reserved 1/2 cup). Mix on medium speed for 2 minutes.
  3. Layer: Grease a 13x9x2-inch pan well. Pour half of the batter into the pan and spread it evenly.
  4. Cinnamon Swirl: In a small bowl, combine the reserved 1/2 cup cake mix, brown sugar, cinnamon, and pecans. Sprinkle this mixture evenly over the batter in the pan.
  5. Top & Bake: Carefully spread the remaining cake batter over the cinnamon layer. Bake at 325°F for 45 minutes or until a tester comes out clean.
  6. Glaze: While the cake is baking, whisk together the powdered sugar, vanilla, and milk until smooth.
  7. Finish: Pour and spread the glaze over the cake while it is still hot from the oven.

Tammy’s Tips

The secret to the perfect texture is beating that butter until it's truly fluffy before adding your other ingredients. When spreading the top layer of batter over the cinnamon sugar, don't worry if it doesn't look perfectly smooth,it will level out in the oven and create those beautiful "honeybun" swirls!
