Ingredients

  • 6 large Fresh tomatoes (or 2-28 oz cans plum tomatoes)
  • 2 cups Water
  • 1 cup Milk
  • 2 tsp Beef bouillon granules
  • 1 Tbsp Salted butter
  • 1 Tbsp Cornstarch
  • 1 tsp Salt
  • 1/2 tsp Onion powder
  • 1/2 tsp Black pepper
  • 1 tsp Guacamole seasoning (optional)
  • Optional: Sour cream and homemade croutons for serving

Instructions

  1. Prep the Tomatoes: Boil the tomatoes until the skins loosen. Peel them, remove the stems, and chop the flesh.
  2. Simmer: Place the chopped tomatoes in a stockpot with the water, bouillon, pepper, salt, onion powder, and herbs (optional seasoning). Cook over medium heat for 30 minutes.
  3. Refine the Base:
  4. For a clear soup: Strain the tomatoes and collect only the juice into a saucepan.
  5. For a hearty soup (Optional): Use an immersion blender or regular blender to blend the tomatoes and liquid until smooth.
  6. Thicken: In a pint jar with a lid, combine the milk and cornstarch. Shake well until no lumps remain.
  7. Finish: Stir the milk mixture and the butter into the tomato base. Heat through until slightly thickened and creamy.
  8. Serve: Taste and adjust salt or pepper as needed. Serve hot with a dollop of sour cream and homemade croutons.

Tammy’s Tips

The guacamole seasoning is a secret little flavor booster,it adds a subtle depth of herbs and spice that really makes the tomato flavor pop! If you're in a hurry and don't have fresh tomatoes on hand, the 28 oz cans of plum tomatoes work just as well and save you the peeling step. For the best experience, definitely pair this with my homemade croutons and a little swirl of sour cream on top!
