This Yogurt Fruit Salad is a fantastic way to enjoy a variety of crisp fruits in a light, flavorful dressing. By using flavored gelatin mixed directly into the yogurt, you create a beautiful, colorful coating that is both tangy and sweet. Ingredients

  • 16 oz. plain yogurt
  • 3 oz. pkg sugar-free flavored gelatin (Jell-O)
  • 3 assorted color apples (keep skins on), chopped
  • 1/2 lb. seedless grapes (assorted colors), halved
  • 15 oz. can mandarin oranges, drained
  • 10 oz. can pineapple chunks, drained
  • 1/2 cup golden raisins
  • 1/2 cup chopped walnuts or pecans
  • 1/2 lemon, juiced
  • 1/4 tsp salt

Instructions

  1. Drain the Fruit: Place the canned pineapple chunks and mandarin oranges in a strainer and let them drain thoroughly while you prepare the rest of the salad.
  2. Make the Dressing: In a large mixing bowl, combine the plain yogurt, salt, and the dry gelatin packet. Whisk well until the gelatin is evenly distributed and the yogurt is a vibrant color.
  3. Prep the Fresh Fruit: Cut the grapes in half and chop the apples into bite-sized pieces (leave the skins on for that beautiful pop of color!). Toss the apples with the lemon juice to prevent browning.
  4. Combine: Add the grapes, apples, raisins, and nuts into the yogurt mixture. Finally, fold in the well-drained oranges and pineapple.
  5. Toss: Mix gently until all the ingredients are thoroughly coated in the yogurt dressing.
  6. Serve: This salad is best served immediately!

To keep the texture perfect, avoid using soft fruits like strawberries or bananas, which can release too much moisture.
