Frozen Fruit Topping & Filling - Master Cookbook Recipe # 242

This versatile two-ingredient recipe is a lifesaver when you need a quick, delicious fruit sauce or filling. By simply microwaving frozen fruit with sugar, you create a vibrant, syrupy topping that is incredible served over a slice of pound cake. It can even be cooked down further to make a thick filling for Southern fried pies!

Ingredients

  • 16 oz. bag of frozen fruit (your choice,strawberries, peaches, or mixed berries work great)
  • 1 cup granulated sugar

Instructions

  1. Combine: In a large microwave-safe bowl, combine the frozen fruit and the granulated sugar. Stir slightly to coat the fruit.
  2. Microwave: Heat the mixture in the microwave for 8 minutes.
  3. Cool: Carefully remove the bowl (it will be very hot) and transfer the mixture to a shallow dish. This helps it cool down more quickly.
  4. Prep: If the fruit pieces are large, use a knife or spoon to cut them into smaller, bite-sized pieces if desired.
  5. Serve: Once cooled, spoon the fruit and its syrup over a slice of cake,it is especially delicious on Master Cookbook Recipe # 239 (Tammy’s Favorite Pound Cake),and top with a dollop of whipped topping.

Notes

Tammy's Tip: You can also use this as a pie filling! If you're making fried pies, continue cooking the mixture until it is thick like preserves. Just be sure to watch it closely and stir frequently toward the end so it doesn't burn.
