Fried Bologna Sandwich or BBQ Bologna - Master Cookbook Recipe # 584
Nothing says Southern comfort like a classic Fried Bologna Sandwich! This recipe takes a childhood favorite and gives it the Collard Valley Cooks treatment. By cutting slits in the bologna and frying it in butter with onions, you get those perfect crispy edges and a savory sweetness that pairs perfectly with fresh garden toppings.

Ingredients
- 2 slices bologna, skin removed
- 1/2 small onion, sliced (optional)
- 2 slices loaf bread
- 2 Tbsp salted butter
- Yellow mustard
- Mayonnaise
- Iceberg lettuce
- 1 slice tomato
- Black pepper
Instructions
- Prep the Bologna: Stack your bologna slices and cut three 1-inch slits from the outside edge toward the center. This prevents the bologna from "bowing" or bubbling up while frying.
- Fry: Melt the butter in a skillet over medium heat. Add the bologna and sliced onions. Fry until the bologna is browned and the onions are soft and golden.
- Prep the Bread: Spread mayonnaise on one slice of bread and yellow mustard on the other.
- Assemble: Layer the fried onions and bologna onto the bread. Season with a good sprinkle of black pepper, then add your lettuce and tomato.
- Finish: Close the sandwich and cut diagonally into triangles.
- Variation: BBQ Bologna
- For a hearty dinner that serves 3 to 4: Fry 6 pieces of bologna (cut into bite-sized pieces) with a whole sliced onion. Pour in 1/2 cup BBQ sauce, stir, and simmer for 10 minutes. Serve this alongside fried potatoes and some good sourdough or French bread!

Tammy's Tips
Don't skip those cuts in the bologna! It ensures the entire slice gets that beautiful buttery sear. If you want a little extra crunch, you can toast your bread in the skillet after you pull the meat out. This sandwich is simple, nostalgic, and absolutely delicious every single time.
