Fish Tacos - Master Cookbook Recipe # 395

These Southern-style fish tacos are all about letting the fresh flavor of the fish take center stage. By searing the fish in salted butter with a kick of Cajun seasoning, you get a beautiful, golden-brown crust similar to a perfectly cooked scallop. It’s a fresh, quick, and light meal that brings a little bit of the coast right to your kitchen table.

This is recipe #395 in Tammy’s Master Cookbook.

Ingredients

  • Fresh Fish Fillets
  • Soft Taco Shells
  • 1/4 cup Salted Butter
  • Seafood or Cajun Seasoning (to taste)

Instructions

  1. Heat the Skillet: Place your skillet over medium-high heat and add the salted butter.
  2. Season the Fish: While the butter melts, season your fresh fish fillets generously with the seafood or Cajun seasoning.
  3. Sear: Place the fish in the hot skillet. Sear both sides until they are a beautiful golden brown. You want a firm, flavorful crust on the outside while keeping the inside tender and flaky.
  4. Assemble: Once the fish is cooked through, remove it from the heat. Break the fish into large chunks and fill your soft taco shells.
  5. Serve: Add your favorite toppings and enjoy your fresh tacos!

Tammy’s Tips

The secret to a great fish taco is that sear! You want the skillet hot enough that the butter and seasoning create a crust, just like you'd see on a scallop. Since the fish cooks so quickly, make sure your soft taco shells are ready to go before you even start the stove. If you want to take these to the next level, try lightly charring your taco shells over an open flame or in a dry pan for a few seconds before filling them.
