Cream Cheese Rangoons - Master Cookbook Recipe # 33

These crispy, golden Rangoons are better than takeout! With a sweet and creamy center and a perfectly fried shell, they are the ultimate party appetizer. Whether you keep them simple or add a little crab meat, they are always a hit.

Ingredients

  • 8 oz. cream cheese, room temperature
  • 1/4 cup sugar
  • 1 green onion, diced
  • 1 package egg roll wrappers (cut into squares)
  • 1 large egg (for egg wash)
  • 1/4 cup sweet crab meat (optional)

Instructions

  1. Make the Filling: In a medium bowl, mix the softened cream cheese and sugar until smooth. Fold in the diced green onion and the crab meat, if you are using it.
  2. Prep Wrappers: Cut your egg roll wrappers into smaller squares if they aren't already. Beat the egg in a small bowl to create an egg wash.
  3. Assemble: Lay out a wrapper and brush the edges with the egg wash. Place a small dollop of the cream cheese filling in the center.
  4. Fold & Seal: Fold the wrapper over to form a triangle, pressing the edges firmly to seal. Tip: Ensure there are no air pockets and the seal is tight so the filling doesn't leak while frying.
  5. Fry: Heat oil in a heavy skillet or deep fryer. Fry the Rangoons in batches until they are a beautiful golden brown on all sides.
  6. Drain: Remove from the oil and let them drain on a wire rack to maintain their crispiness.
  7. Serve: Serve warm with your favorite dipping sauce, like a sweet chili sauce.

Notes

  • Easier Wrapping: If the filling is too soft, chill it in the refrigerator for 20 to 30 minutes before you start assembling; it will be much easier to handle.
  • Don't Overfill: To prevent the Rangoons from bursting in the oil and to ensure they stay extra crispy, avoid the temptation to overfill the wrappers.
  • Savory Twist: If you decide to add the crab meat, you can reduce or entirely omit the sugar for a more savory, traditional crab rangoon flavor.
  • Perfect Pairing: These go wonderfully with a sweet chili dipping sauce or a classic duck sauce!
