Ingredients

  • 2 (8 oz.) pkgs cream cheese, softened
  • 8 oz. can crushed pineapple, well-drained
  • 1/4 cup green bell pepper, finely chopped
  • 2 Tbsp onion, finely chopped
  • 1 1/2 tsp seasoned salt
  • 1 cup pecans, finely chopped (plus extra for rolling)

Instructions

  1. Mix: In a medium mixing bowl, combine the softened cream cheese, well-drained crushed pineapple, chopped green pepper, onion, seasoned salt, and 1 cup of chopped pecans.
  2. Blend: Mix thoroughly until all ingredients are evenly distributed and the mixture is smooth.
  3. Shape: Form the mixture into a large ball.
  4. Chill: Wrap the ball tightly in plastic wrap and refrigerate for at least 2 hours (or until firm). This helps the flavors meld and makes the ball easier to handle.
  5. Coat: Just before serving, remove the plastic wrap and roll the cheese ball in additional chopped pecans until the surface is completely covered.
  6. Serve: Place on a serving plate and surround with your favorite crackers.

Notes

  • Drain Well: The secret to a perfect cheese ball is ensuring the pineapple is drained as much as possible. Use a mesh strainer and press out the excess juice to prevent the mixture from becoming runny.
  • Make it Festive: For a holiday look, you can mix a little chopped fresh parsley or a dash of paprika in with the pecans when you roll the ball for a pop of color.
