Ingredients

  • 1/2 lb Smoked sausage, cut into bite-sized pieces
  • 3 Tbsp Salted butter
  • 1 large Carrot, chopped small
  • 1 stalk Celery, chopped
  • 1/3 cup Onion, chopped
  • 12 or 14 oz can Corn with peppers
  • 1 can Regular or shoepeg corn, drained
  • 2 1/2 cups Cheddar cheese, shredded
  • 1/2 cup Evaporated milk
  • 1/2 cup Water (for the base)
  • 1 cup Cold water (for the slurry)
  • 3 Tbsp All-purpose flour
  • 1/2 tsp Salt
  • 1/2 tsp Celery salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Paprika

Instructions

  1. Sauté: In a large pot over medium heat, sauté the butter, carrots, celery, onion, and smoked sausage for 10 minutes until the vegetables are tender and the sausage is lightly browned.
  2. Thicken: In a small cup, whisk together the 1 cup of cold water and flour until perfectly smooth. Pour this mixture into the pot with the sautéed vegetables and sausage.
  3. Simmer: Stir in the remaining ingredients,both cans of corn, evaporated milk, the extra 1/2 cup of water, salt, celery salt, black pepper, and paprika.
  4. Finish: Turn the heat down to low and stir well. Add the shredded cheddar cheese, stirring until it is completely melted and the chowder is creamy.
  5. Serve: Ladle into bowls and serve immediately while hot and cheesy.

Notes

Tammy’s Tips

Using a can of shoepeg corn adds a lovely crisp texture and sweetness that really makes this chowder special. The evaporated milk is the secret to getting that rich, creamy consistency without having to make a heavy cream base from scratch. If you like a little extra kick, look for the "hot" variety of smoked sausage to balance out the sweetness of the corn!
