Ingredients

  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour (or 3 Tbsp cornstarch)
  • 1/4 tsp salt
  • 2 large eggs
  • 2 1/4 cups milk
  • 1/4 cup salted butter
  • 1 tsp vanilla extract
  • 1 cup flaked coconut, toasted

Instructions

  1. Whisk Dry Ingredients: In an 8-cup glass batter bowl (or a large microwave-safe bowl), whisk together the sugar, flour (or cornstarch), and salt until well combined.
  2. Combine with Wet: Add the eggs and milk to the dry mixture. Whisk thoroughly until the eggs are fully incorporated and the mixture is smooth.
  3. Initial Cook: Microwave on high for 3 minutes.
  4. Whisk and Scrape: Carefully remove the bowl and whisk the mixture, ensuring you scrape any flour or thickening agent from the bottom and sides of the bowl.
  5. Thicken in Intervals: Continue to microwave in 2-minute intervals, whisking in between, until the pudding is thick, creamy, and holds its shape.
  6. Add Flavor: Remove from the microwave and whisk in the salted butter, vanilla extract, and the toasted flaked coconut.
  7. Chill: Allow the pudding to cool to room temperature on the counter. Once cooled, transfer to an airtight container and refrigerate until chilled and set.
