Ingredients

  • 16 oz. carrots (sliced thin or mini-sized)
  • 2 Tbsp salted butter
  • 1/3 cup apricot preserves
  • A few shakes of red pepper flakes (optional)
  • Dash of salt
  • Water (enough to cover)

Instructions

  1. Simmer: In a skillet or saucepan, add your carrots and butter. Pour in enough water to just cover the carrots.
  2. Cook: Place on a simmer and cook for about 20 minutes, or until the carrots reach your desired tenderness.
  3. Drain & Season: Carefully drain the water. Add the apricot preserves and salt, then mix well to coat every carrot.
  4. Add Heat: If you’re using red pepper flakes, toss those in now for a little kick.
  5. Serve: Keep on low heat (simmer) to stay warm until you’re ready to serve!

Notes

Tammy’s Tips

For the best results, try to slice your carrots into uniform rounds so they all cook through at the exact same time. If you find your glaze is a bit too thick after adding the preserves, you can add a small splash of the cooking water back in to help it coat the carrots perfectly. To really make the colors pop on camera or at the table, finish the dish with a pinch of fresh chopped parsley or a bit of lemon zest for a bright, professional touch.
