This classic Carrot Raisin Salad is a refreshing and naturally sweet side dish that brings back fond memories of family gatherings. By using crushed pineapple and its juices, the carrots become tender and flavorful, while the raisins add a chewy sweetness that everyone loves.

Ingredients

  • 1 lb. carrots (peeled and grated)
  • 1/4 cup raisins
  • 8 oz. can crushed pineapple (with juice)
  • 2 Tbsp mayonnaise
  • 1/4 tsp salt

Instructions

  1. Prep the Carrots: Peel your carrots and grate them using a small hand grater (see Tammy's Tip below).
  2. Combine Ingredients: In a medium mixing bowl, add the grated carrots and the crushed pineapple, including all the juice from the can.
  3. Mix: Add the raisins, mayonnaise, and salt. Stir the mixture thoroughly until the mayonnaise is evenly distributed and all the ingredients are well combined.
  4. Chill and Store: Transfer the salad to a serving dish and cover it tightly. Refrigerate until ready to serve. This salad stays fresh and delicious for up to 5 days in the refrigerator.

Tammy's Tips

For the best texture and flavor, I recommend using a small grater rather than the larger one typically used for coleslaw. Grating the carrots finely helps break them down just enough to release their natural sweetness and allows them to soak up that delicious pineapple juice. It makes the salad much juicier and enhances the overall flavor of the dish!
