Butter Fried Chicken - Master Cookbook Recipe # 511
This Butter Fried Chicken is a game-changer for anyone who loves a tender, juicy breast or thigh with a rich, golden crust. By scoring the meat, we allow the seasoned flour and savory butter to penetrate deep into the chicken, ensuring every bite is packed with flavor. Finishing the chicken with fresh onions in the pan creates a sweet, caramelized aroma that makes this simple dish feel like a gourmet meal.
This is recipe #511 in Tammy’s Master Cookbook.
Ingredients
- Boneless skinless chicken breasts or thighs
- 1/2 cup Salted butter
- 1/2 Onion (chopped)
- All-purpose flour (for coating)
- Chicken seasoning (your favorite blend)
- Salt & black pepper to taste
Instructions
- Score the Meat: Using a sharp knife, score your chicken pieces with a crisscross pattern, about 1/2 inch deep. This helps the chicken cook evenly and soak up the butter.
- Season and Coat: Season the chicken well with salt and pepper. Dredge each piece lightly in flour until coated, shaking off any excess.
- The Butter Fry: Melt the salted butter in a preheated skillet over medium heat. Place the chicken in the skillet and fry for 4 minutes per side.
- Brown with Onions: Increase the heat slightly. Add the chopped onions and your favorite chicken seasoning to the pan (be careful with extra salt if your seasoning is already salty). Continue to brown the chicken for 1 to 2 minutes per side until the onions are soft and the chicken is a beautiful golden brown.
- Check Temperature: Use a meat thermometer to ensure the internal temperature reaches 165°F in the thickest part of the meat.
- Rest: Remove the chicken from the skillet and let it rest for 5 minutes before serving to keep the juices locked in.
Notes
Tammy’s Tips: Scoring the chicken is the real secret here,it creates more surface area for that delicious butter to brown! If you're using a very salty chicken seasoning, just go a little lighter on your initial table salt. This chicken is absolutely wonderful served alongside some fresh green beans and mashed potatoes to soak up any leftover butter from the pan.
