Browned Butter Icing - Master Cookbook Recipe # 258

Ingredients
- The Icing:
- 1 cup salted butter
- 5 cups confectioner’s sugar (sift if lumpy)
- 1/4 tsp salt
- 1/2 cup half and half (plus more for consistency)
- The Topping:
- 1 jar caramel topping
- Toasted chopped pecans (for garnish)
Instructions
- Brown the Butter: Place the butter in a saucepan or skillet over medium heat. Cook, stirring occasionally, until the butter turns a golden brown and smells nutty. Watch it closely so it doesn't burn!
- Cool: Remove the browned butter from the heat and allow it to cool for at least 20 minutes.
- Mix: Transfer the cooled butter to a stand mixer. Add the salt, confectioner’s sugar, and half and half.
- Whip: Beat on medium-high speed until the icing is creamy and smooth. If it’s too thick, add a splash more half and half until it reaches your desired spreading consistency.
- Add Caramel: Once the cake is iced, remove the lid from the caramel jar and microwave for about 30 seconds until spreadable. Pour it over the center of the cake and use a spatula to gently push it toward the edges so it drizzels down the sides.
- Garnish: Immediately press toasted chopped pecans into the sides or sprinkle them over the top for a classic Southern look.
