Ingredients

  • 1 Pie shell
  • 1/2 lb. Broccoli, chopped small
  • 1 1/2 cups Shredded cheese (divided)
  • 4 large Eggs, beaten
  • 1 cup Half-and-half
  • 1/2 cup Mayonnaise (or 1/2 cup melted salted butter)
  • 1/4 cup Self-rising flour
  • 1/2 tsp Onion powder
  • 1/2 tsp Black pepper
  • Optional: 1/2 cup diced cooked ham, 1/4 cup diced onion

Instructions

  1. Pre-bake Shell: Preheat your oven to 400°F. Pre-bake the pie shell for 20 minutes. Once done, remove from the oven and reduce the temperature to 350°F.
  2. Layer Fillings: Fill the pre-baked shell with the small chopped broccoli, 1 cup of the shredded cheese, and the optional ham and onion if using.
  3. Mix Custard: In a medium bowl, combine the beaten eggs, half-and-half, onion powder, mayonnaise (or melted butter), black pepper, and self-rising flour. Beat the mixture well until smooth.
  4. Assemble: Pour the egg mixture over the broccoli and cheese in the pie shell. Sprinkle the remaining 1/2 cup of cheese over the top.
  5. Bake: Bake at 350°F for 40 minutes or until the custard is set and the top is golden brown.
