Bowl of Butter Beans - Master Cookbook Recipe # 644
These Butter Beans are a true Southern delicacy,creamy, tender, and incredibly flavorful. By using chicken bouillon or stock instead of the traditional pork fat, you get a lighter, cleaner taste that lets the natural buttery flavor of the lima beans shine through. Whether you use a pressure cooker for speed or a slow stovetop simmer, the result is pure comfort.

Ingredients
- 16 oz Dried lima beans (Butter beans)
- 32 oz Chicken stock (or 4 cups water + 2 tsp chicken bouillon granules)
- 1/8 cup Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Prep & Rinse: Sort through the dried beans, removing any discolored beans or debris. Rinse thoroughly under cold water.
- Pressure Cooker Method:
- Place beans in the cooker and cover with 1 1/2 inches of stock/water. Add oil, salt, and pepper.
- Bring to high pressure for 10 minutes, turn off, and let sit for 2 hours.
- Open and continue cooking until soft.
- Stovetop Method:
- Place beans in a stockpot, cover with 1 1/2 inches of liquid, and add oil and seasonings.
- Bring to a boil for 15 minutes, then turn off the heat.
- Let the beans soak for 3 hours, checking every hour to ensure they stay covered with water.
- Bring back to a medium simmer and cook until tender.
- Final Touch: Once soft, taste the broth and add more salt if needed before serving.
