Beef Burrito Supreme - Master Cookbook Recipe # 44
This hearty casserole takes the flavors of a classic beef burrito and transforms them into an easy-to-serve family meal. Smothered in a rich, homemade cheese sauce and baked until bubbly, it’s a comforting Southern twist on a favorite.

Ingredients
- 1-1/2 lb. ground beef or chuck
- 1 cup salsa (plus extra for topping)
- 1 tsp chili powder
- 1/4 tsp cumin
- 1 tsp salt
- 1/4 tsp pepper
- Recipe #593 Cheese Sauce
- 1 onion, sliced
- 1 bell pepper, sliced
- 3 Tbsp olive oil
- 2 (15.5 oz.) cans red kidney beans (or pintos)
- 2 tsp onion powder
- 1 tsp garlic powder
- Burrito-size flour tortillas
- Cooking spray or oil
- Toppings: Shredded lettuce, diced tomato, sour cream, and extra shredded cheese
Instructions
- Prep the Beef: Brown the ground beef in a skillet and drain the grease. Stir in 1 cup of salsa, chili powder, cumin, salt, and pepper.
- Sauté Veggies: In a separate pan, sauté the sliced onion and bell pepper in olive oil until soft.
- Prepare Beans: Heat the kidney beans in a saucepan or microwave-safe bowl. Mash them and stir in the onion powder and garlic powder.
- Make Sauce: Prepare your Recipe #593 Cheese Sauce (as seen in the video).
- Assemble: Lightly oil or spray a 13x9x2-inch baking dish. Lay out each tortilla and fill with a portion of the beef, mashed beans, and sautéed vegetables.
- Roll: Roll up the tortillas tightly and place them seam-side down in the prepared dish.
- Top & Bake: Pour the cheese sauce evenly over the tortillas. Sprinkle with a little extra salsa and shredded cheese. Bake at 350°F for about 40 minutes or until bubbly.
- Serve: Garnish with fresh lettuce, tomatoes, and sour cream before serving.
Notes
- Bean Swap: If you aren't a fan of kidney beans, pinto beans work just as well for the mash!
- Homemade Touch: The homemade cheese sauce is what really makes this dish "Supreme",it's worth the extra few minutes of effort.
- Make Ahead: You can assemble the burritos in the dish earlier in the day, then just add the sauce and bake when you're ready for dinner!
