Bear Claws - Master Cookbook Recipe # 137

These Bear Claws are a fantastic treat for a brunch or a special morning coffee. By using store-bought puff pastry, you get that professional bakery look with very little effort. The almond filling stays nice and soft inside while the slivered almonds on top provide a perfect toasted crunch.

Ingredients

  • 1 package Pepperidge Farm puff pastry sheets (thawed)
  • Almond filling or almond paste (approx. 2 to 3 Tbsp per claw)
  • Slivered almonds
  • 1 egg white (beaten)
  • Large sugar crystals (optional, for topping)

Instructions

  1. Prep: Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. Cut: Unfold the thawed puff pastry sheet and cut along the natural folds to create three long rectangles.
  3. Fill: Spoon 2 to 3 tablespoons of almond filling onto one half of each rectangle, leaving a small border around the edges.
  4. Seal: Dampen the edges of the pastry with a little egg white. Fold the pastry over the filling and use a fork to crimp all three open edges tightly.
  5. Shape: Along the long crimped edge, use a knife to cut 1-inch slits every 3/4 inch to create the "toes."
  6. Top: Place the pastries on your prepared baking sheet. Pull the cut edges apart slightly to fan them out. Brush the tops with egg white and sprinkle generously with slivered almonds and sugar crystals.
  7. Bake: Bake for 25 to 30 minutes until the pastry is puffed up and a beautiful golden brown.

Notes

Tammy’s Tip: "You can usually find those puff pastry sheets in the freezer section near the pie crusts. If you can't find almond filling in the baking aisle near the other pie fillings, you can use almond paste,just be sure to cream it a little so it's easy to spread. They are just beautiful when they come out of that oven all golden and flaky!"
