Banana Custard - Master Cookbook Recipe # 204
This rich and creamy banana custard is the secret to making Master Cookbook Recipe # 203 truly spectacular. By using evaporated milk and fresh mashed bananas, you get a deep, natural flavor that beats any store-bought pudding. It’s perfect as a cake filling, but it's just as delicious served on its own with a few vanilla wafers!

Ingredients
- 1 cup evaporated milk
- 1 cup water
- 1/3 cup self-rising flour
- 1/2 cup granulated sugar
- 3 large egg yolks
- 1 cup mashed ripe bananas
Instructions
- Whisk Dry: In a microwave-safe glass batter bowl, combine the self-rising flour and granulated sugar. Whisk them together until any lumps are gone.
- Add Liquids: Add the evaporated milk, water, and egg yolks, whisking thoroughly after each addition to ensure a smooth base.
- Mix in Fruit: Stir in the mashed bananas until well incorporated.
- Microwave & Stir: Microwave on high for 3 minutes. Carefully remove the bowl and stir well, making sure to scrape the bottom and the sides where the custard tends to thicken first.
- Thicken: Return the bowl to the microwave and cook in 1-minute intervals, stirring between each, until the mixture is thick, creamy, and coats the back of a spoon.
- Cool: Pour the custard into a shallow dish to help it cool quickly and evenly before using it to fill your cake layers.
Notes
Tammy's Tip: To prevent a "skin" from forming on your custard while it cools, press a piece of plastic wrap directly onto the surface of the hot custard.
