This refreshing, creamy salad is a delightful blend of tart apples, sweet pineapple, and crunchy pecans, all brought together with a zesty lemon gelatin and cream cheese base. It’s the perfect chilled side dish for any family gathering or holiday spread.

Ingredients

  • 20 oz. can crushed pineapple (with juice)
  • 1/3 cup granulated sugar
  • 3 oz. lemon flavored gelatin
  • 8 oz. cream cheese (room temperature)
  • 8 oz. whipped topping (Cool Whip)
  • 2 cups chopped apples
  • 1/2 lemon
  • 1/2 cup purple seedless grapes, halved
  • 1 cup chopped pecans

Instructions

  1. Prepare the Gelatin Base: In a saucepan, combine the crushed pineapple (do not drain), sugar, and lemon gelatin. Bring the mixture to a boil and let it cook for 2 to 3 minutes until the sugar and gelatin are fully dissolved. Pour the mixture into a shallow dish and allow it to cool completely to room temperature.
  2. Prep the Apples: While the gelatin cools, peel and chop your apples. Squeeze the juice from half a lemon over the apples and toss well to prevent browning.
  3. Cream the Base: Once the gelatin mixture has cooled, add the softened cream cheese. Use a hand mixer to blend until the mixture is smooth and creamy.
  4. Fold and Combine: Using a large spatula, gently fold in the whipped topping, lemon-tossed apples, grape halves, and chopped pecans until everything is evenly incorporated.
  5. Chill: Transfer the salad to a serving dish (or keep in the current dish) and refrigerate until cold and set.

Notes

The lemon juice on the apples is key for keeping them looking fresh and bright! This recipe is very versatile,feel free to experiment with different gelatin flavors or fruits like mandarin oranges, just make sure any additional fruit is well-drained so the salad stays creamy. This dessert salad is always one of the first things to disappear at a potluck!
