Ingredients

  • Your choice of vegetables: (Suggested: 1 summer squash, 1 zucchini, 1 bell pepper, and 1 onion, all cut into 1” pieces)
  • 2-3 Tbsp olive oil or avocado oil
  • To taste: Salt, black pepper, and your favorite herb blend (like Italian seasoning or garlic powder)

Instructions

  1. Seasoning: In a medium bowl, toss your prepared vegetables with the oil and seasonings until every piece is lightly coated.
  2. Air Fryer Setup: Preheat your air fryer to 320°F.
  3. Cook: Place the vegetables in the air fryer basket in a relatively even layer. Cook for 20 minutes or until they are fork-tender.
  4. Monitor: Check the vegetables after about 10 minutes. If they are browning too quickly, reduce the temperature slightly for the remaining time to ensure they cook through without burning.

Notes

Tammy’s Tips: To get the best "roast" in an air fryer, give the basket a good shake halfway through the cooking time to make sure everything gets even heat. If you're mixing hard vegetables like potatoes with softer ones like squash, just be sure to cut the potatoes into smaller pieces so they finish at the same time. A quick spritz of lemon juice right before serving really makes the flavors pop!
