7 Minute Icing - Master Cookbook Recipe # 399

Ingredients
- 1-1/2 cups granulated sugar
- 1/4 tsp cream of tartar
- 1/2 tsp salt
- 1/3 cup water
- 2 tsp light corn syrup
- 2 large egg whites
- 1 tsp vanilla extract
Instructions
- Prep the Water Bath: In a medium saucepan, bring 6 cups of water to a boil.
- Combine: While the water heats, combine all ingredients (except the vanilla) in a large glass bowl. Mix with an electric hand mixer until thoroughly combined.
- The 7-Minute Mix: Place the glass bowl on top of the saucepan with boiling water. Set a timer for 7 minutes. Beat with a hand mixer on the highest setting for the entire 7 minutes.
- Finish: Remove from heat immediately when the timer goes off. Add the vanilla extract and beat for an additional 2 minutes.
- Ice: Ice your cake immediately while the frosting is at its best consistency.
Notes
Tammy's Tips
Ensure your mixing bowl sits on top of the saucepan without the bottom actually touching the boiling water to prevent scorching. It is critical to beat the mixture for the full seven minutes so the sugar has enough time to dissolve completely and avoid a grainy texture.
